These three delicious meals or sides are easy to prepare and add a nutty taste that is not only one to savor, but also adds some protein power.

Sauteed Kale with Creamy Sesame Dressing

If you are a tahini lover then this dish is for you!


1 bunch kale with creamy sesame dressing

1 tsp sesame seeds

1 tbsp tahini (sesame paste)

2 tsp soy sauce

2 tsp of nayonaise (I find this healthier than regular mayo and much less in saturated fat)

1 tsp of honey


Combine 1 tbsp toasted sesame seeds, 1 tbsp tahini (sesame paste), 2 tsp soy sauce, 2 tbsp nayonaise, and 1 tsp of honey in a medium bowl.


Sautee Kale in a little bit of olive oil for a few minutes and then add dressing on top.

Spicy Garlic Grilled Baby Bok Choy


2 tbsp reduced sodium soy sauce

2 tbsp Asian chili garlic sauce

2 tbsp Canola oil

3 tbsp rice vinegar

1 tbsp sugar

2 tsp finely chopped garlic in a small bowl

4 head of baby bok choy

1/4 cup chopped cashews


Combine 2 tbsp reduced sodium soy sauce, 2 tbsp Asian chili garlic sauce, 2 tbsp. canola oil, 3 tbsp. rice vinegar, 1 tbsp sugar, and 2 tsp finely chopped garlic in a small bowl.


Set 4 heads of baby bok choy, halved lengthwise, in a rimmed baking dish and brush with two thirds soy garlic mixture.  Wrap bok choy tops with foil.  Grill at 350-400.  Cook oil rubbed greens directly on grill, turning once, until slightly softened and streaked brown, 5-6 minutes total.

Remove foil from leaves and set bok choy on a platter.  Brush with remaining soy garlic mixture and sprinkle with 1/4 cup chopped roasted cashews.

Swiss Chard with Pecans and Raisins

This dish is a weekly staple of mine.  Its easy to prepare and I love the combination of savory nuts and sweet raisins.


1 bunch of swiss chard

2 tbsp ghee

1/4 cup of pecans (halved)

1/4 cup of raisins

1/4 tsp salt

Preparation (5-7 minutes)

Take 2 tbsp of ghee in large sautee pan, then add washed and cut swiss chard into pan.  Add salt once, greens start to cook down.

In separate pan, take 1 tsp of ghee in a smaller sautee pan and cook pecans and raisins til they are slightly browned.  Once the greens are almost down, throw the nuts and raisins in at the very end.  Cool, serve, and Enjoy!
